  • Brined and smoked Chicken Quarters

    A few weeks back I had asked a question about frozen vs. fresh chicken quarters. A local grocery had 'em on sale for .39/lb. I picked up a ten lb bag cuz the price was right. RowdyRay said he thought that I would find some "rejects" in the bag(broken bones, ribs, feathers)....he was right. No biggie tho. It was still chicken.

    Called the wife from work yesterday and had her take 'em out of the freezer.
    We whipped up a quick batch of brine with your basic 1 gal water, 1 cup salt, 1/2 cup brown sugar and 1/2 cup white sugar. I added a few other ingreeds like molasses, garlic, onion power, pepper. Here they are in the brine...




    Today I pulled them from the brine and rinsed and dried them off. Dashed a bit of salt, pepper and garlic on them and headed to the GOSM...

    A pic of them sitting in the thin blue getting happy in the apple smoke sauna just after a "spritz" (sorry Rich) of garlic butter....



    And the final plated pic...Smoked chicken quarter, with fresh from the garden garlicy salt potatos and yellow beans. Thanks for checkin this out, I'm going to bed!

      Looks good my friend. So what was yer synopsis on the fresh vs frozen? I buy em on sale in the bags all the time. Fresh is better but, it's kinda like the woman ya wont throw outta bed fer eatin carckers. Whats yer thought?

          Wow Dingle, they look good. Notice any difference over fresh?

          Just thought I'd warn ya. It's still chicken, and if you're not afraid of a little work it's a good buy. Used to get them alot when the kids were still home. They'd eat anything.

                    Heh...spritz if you must. I have yet to use a sprayer... I still am a brush/mop guy. Can leave some ground spice in that way.

                      Thank you everyone! My thoughts are I always prefer fresh anything, produce, seafood or meats. However, after brining and "doctoring" the chicken up, I really could not tell the difference. And hey...for the price I was really pleased. Thanks again for your thoughts and for looking.
