    I do something kind of similar. I completely de-bone a whole chicken (some would call this spatchcocked, but actually it goes a step further with de-boning the entire bird), wrap around a small pork loin, and smoke in apple until done. Oh yeah, never forget the rub.

        You know, sometimes the only thing on my mind is the perfect smoke and the perfect meal. So I neglect to break out the camera most of the time. I need to get better at it though.
