    It's worth a try if you've never had them Alex....if there are any complaints it is usually a matter of texture. The potato and onion soften the texture of the sausage a bit...it still eats well, just feels a bit different on the palate.

      well I made 10# of this potato sausage today and I can honestly say it is better thatn any I can buy around here Thanks again for the recipe

        WORD UP BROTHER !~
        We serve this EVERY Christmas Eve w/Taters and Beans and also include, Pickled Herring (appetizer), Fruit Soup, Rice Pudding, and a bottle of Frozen Aquavit prefer Linie Brand. :)

        Fruit Soup and Rice Pudding w Lingonberries recipes Below - Enjoy as we do ! DON'T FORGET AQUAVIT !
        FRUIT SOUP

        2 (8-10 oz Pkg) Large Sago OR Pearl Tapioca
        3 Qts Water
        8 Oz Dried Apricots Chopped
        36 OZ Pitted Prunes
        30 Oz White Raisins
        16 Oz Dark Raisins
        Juice and Sliced Rinds Of 2 Lemons
        2 Sticks Cinnamon
        40 Oz Jar Welches Grape Juice (Purple)
        3 Qts Apple Cider (Cinnamon Flavored, Optional)
        3 Cups Sugar

        In 3 Qts of Water, Soak Tapioca, Apricots and Prunes overnight.
        In a HEAVY Kettle combine all ingredients and cook slowly
        Until the Tapioca is Clear.
        Stir almost constantly as this scorches VERY Easily.
        Preferred Method is to put all ingredients into a Large ENAMEL Roaster and bake at 325’ for 3-4 hours, Stirring occasionally, until the Tapioca is clear.

        If Necessary, OR desired, Thin with additional grape or apple juice.
        Serve Warm OR Cold.
        2 ½ Gallons.


        NOTE: 1 Can of Cherry Pie Filling Can be added for its bright color.
        Add or substitute dried pears, peaches or mixed dried fruits.

        RICE PUDDING (The Family Recipe Handed Down)

        ½ Cup Uncooked Rice
        4 Eggs
        ½ Cup Sugar
        1 Tsp. Salt
        1 Tsp. Vanilla
        2 Cups Milk
        1 Can Evaporated Milk (12 oz)

        Cook Rice to Package Directions.
        Scald Milk. (Put in Micro Till HOT)
        Beat the Eggs Slightly.
        Add Sugar, Salt and Vanilla to Eggs.
        Add Rice to the Milk.
        Add To Egg Mixture.
        Pour into LIGHTLY Buttered Casserole Dish.
        Set Casserole Dish into a Large Cooking Pan with
        About 1 ½ - 2 inches of HOT Water in it.
        Bake at 285’ for 2 Hours.
        Till Knife stuck into the center comes out CLEAN.
        Cool in Fridge.
        Sprinkle Cinnamon over the top for “garnish”
        Lingonberries are a MUST garnish as well.

        Lingon Berries : RECOMMENDED – Midnight Sun – Wild Swedish Lingon Berries –
        Stirred with Sugar – Produced by – “Ornas Produkter AB” – Kungsangen, Sweden

        NOTE: For Holidays we also double and triple the batch.

          I'm just happy you're enjoying it Jim. I'm originally from the midwest (Michigan) and we always had this on Christmas as well. Absolutely can not get it out here in New England, but I'm satisfied with this recipe ...it made about 4 1/2 good sized rings, which is plenty enough for us.

                LOL...I tuck a stainless "brillo" pad in the drain when I do this. Allows water flow but stops the casings. Also... don't work with casings much longer than twice yer arm's length...without a stool anyway

                Nice sausage... I would like to try that stuff.

                            Lena's grandmother always served this at Christmas...Bought it from a local butcher...I'm sure yours is far better...
