  • 8lb. Round Roast To Jerky

    Sliced by hand instead of using the hobart. Saves a lot of cleaning time.
    Into a large freezer bag for 24 hours. Marinated in Veri Veri Teriyaki sauce 1 teaspoon of garlic powder, 1 teaspoon of ginger and 9.0 grams of cure #1 and a couple of other secret spices I only hold the key to for 24 hours. No smoker this time around but used some liquid smoke. Use the right amount and it works out OK. Better then standing outside tending the smoker and rotating the racks when its 10 degrees F outside.
    6 racks going into the 9 rack dehydrator for 10 hours @ 155F.
    Checked this morning and they are at the bending and cracking stage so out they came.

        Yup they turned out perfect. Good thing I went downstairs to check on them this morning as I had it set for 12 hours but they was done in 10 hours.

                Thanks everyone for the points. This has been my go to jerky recipe for a long time but up here in Canada we cannot get the Veri Veri Teriyaki sauce unless someone makes a run to State's side and picks me up some LOL
                I can get it shipped from Amazon but shipping would not be worth it so I have a friend who goes once every two months and I put my order in.
                It is good sh!t. Lots of recipes trying to clone it but they don't come close.

                  What was the yield? Last batch I got about 40%, Ugh..jerky ain’t cheap!

                        I know it's not the same thing but I found a teriyaki recipe online that is really good. I prefer it to any store bought I've tried. Just throwing it out there in case you wanted to give it a try.

                        1 tablespoon cornstarch
                        1/4 cup soy sauce
                        1/4 cup brown sugar, packed
                        1/2 teaspoon ground ginger
                        1/4 teaspoon garlic powder
                        2 tablespoons honey

                        In a small bowl, whisk together cornstarch and 1/4 cup water; set aside.

                        In a small saucepan over medium heat, add soy sauce, brown sugar, ginger, garlic powder, honey and 1 cup water; bring to a simmer. Stir in cornstarch mixture until thickened enough to coat the back of a spoon, about 2 minutes or so; let cool to room temperature.

                              Looks mighty tasty. Gettin ready to try some MH ground beef jerky this week. Weather is finally coolin down in Phoenix and me cold smoking bug is alive again.
