The practice cook is a great idea. It is important that you can cook everything and prepare everything without going into the house. If you do, remember to write down why you went in and correct it. Keep notes on your timetables. Very important to know when to put on meats so that they can get done perfectly,with not too much time left to get cold or mushy/dry ect.
Looks like you get an hr between turn in's, thats a huge help right there!
Make your marinades, injections, rubs, and sauces ahead of time, and take them with you ready to go. It is better to have more than enough, than not enough. Pan's ,foil, gloves, dissinfectant, therms, warm clothes ect.
Ryan, that smoker looks awesome! Don't set your sights too high. be happy to finish in the top 50% on your first one. Take the time to talk and visit with as many of the teams as you can. They are usually very helpfull, and friendly. Hope for good weather, and have fun. You will be nervous no doubt, but after that last turn in, its party time. I wish I lived 12 miles from a comp. You guys are so lucky, no drive, no garnish, an hr between turn in's
