          Oh hell Ry, I missed this post completely... long two weeks my brother!
          I have been scared to go check the confirmed teams.. damn Henry is gonna be there! He has some kick ass butt, I got some solid advice on what to do with Henry, Ill tell ya later, thanks Scott! ;)
          The All hogs go to heaven team is also at Stagecoach every year, so we will see them all there too... he does a decent butt, he smokes with oak as I recall.
          Big Mista is not on the list.. whew... he does an amazing butt with an amazing sauce... ok Ry I am getting terrified! I think a weekend back yard comp with your family as judges is a great idea, let shit something in March... hummmm ST Patricks Day... what say you? and of course, he forgot to mention our self proclaimed "pit bitch" tee hee, that is our other member the lovely fattie faerie, Billie Jean herself. She will be the cog in this mean green team. Oh and before I forget Ry, Jo has said she wants to come and help if need be.

              Great to hear. I am stoked for you guys!

              The practice cook is a great idea. It is important that you can cook everything and prepare everything without going into the house. If you do, remember to write down why you went in and correct it. Keep notes on your timetables. Very important to know when to put on meats so that they can get done perfectly,with not too much time left to get cold or mushy/dry ect.

              Looks like you get an hr between turn in's, thats a huge help right there!

              Make your marinades, injections, rubs, and sauces ahead of time, and take them with you ready to go. It is better to have more than enough, than not enough. Pan's ,foil, gloves, dissinfectant, therms, warm clothes ect.

              Ryan, that smoker looks awesome! Don't set your sights too high. be happy to finish in the top 50% on your first one. Take the time to talk and visit with as many of the teams as you can. They are usually very helpfull, and friendly. Hope for good weather, and have fun. You will be nervous no doubt, but after that last turn in, its party time. I wish I lived 12 miles from a comp. You guys are so lucky, no drive, no garnish, an hr between turn in's
