Yes Capt Dan we have the bug for sure~ I don't think we got pix of the turn in boxes... I wish we would have... Yes Sir Rich, the Mad Hunky was on the ribs.. 3 tinis and a cuzzi on the chicken with a raspberry bbq sauce. Ry's boy Killian took pictures and video to document the whole thing. It will take him a bit to go through all of them and get them up. Ry was the rockstar for sure this weekend, much love brother! Next comp.. no Jager ;)

Yowsers!! Yeehaw!! We got to walk the walk!! Shhheeeeet howdy I cannot begin to explain how exciting this was!! I have got the 260 plus pics uploaded now. I haven't forgot to share with y'all. The wife and myself enjoyed our day of celebration, of marriage. I will get the pics up tomorrow. All of you were with us in spirit and in our thoughts as we made our way through the hours. If it were not for this forum, I would not know many of the contributing factors in many of the meat categories. Thank you my friends 15th chicken 13th ribs. soooo much fun!! Rich!! Yes!! Mad Hunky walked the walk, brotha. A brilliant set of smokin' ribs they were. Props brohiemer!!

Finally I have some pictures of our first event to share with you. My oldest son took I guess over 400 pics. I originally thought there were 200 plus. Whew!
Friday just after 5 pm. Set up and ready to go. This is the rig we competed with. Just over the left corner of the smoker is a white tent. That is the judges/turn in tent. Schwweeet!! We cooked over a red oak with a smidge of olive wood.
Friday evening butt prep. We came into this event with 2- 10 to 12 lb. briskies,2- 10 lb. butts, 4 racks of spare ribs, and 2 whole chickens. All meats were fresh never frozen. 187.50 dollars total

Later Friday evening..brisky prep. Mustard slather/Java rub injected with coffee and worshy.
Briskies hit the grate at 10 pm Friday night. Running temps at 240° average. Pretty windy and cold. But that comes with this territory.
Saturday morning
ribs and butts are on. Butts hit the grate at 11 pm Friday night. Ribs trimmed to St. Louie and on the smoker at 7 am Saturday morning.
The chicken not shown in any of these photos were two 3 to 4 lb free range fryers halved rubbed EARLY morning Saturday and set to mingle with the 3 martinis and a jacuzzi rub. Placed in the rear smoker box above he fire box, as this gets higher temps. Sprayed with Apple juice 3 times in the last 1.5 hours of the cook. Juice caramelized on the skin and gave great color. Last 30 minutes they were glazed with a honey/Raspberry vinaigrette glaze. Once set, we turned in a complete jointed half. We had bite through skin. Damn I wish I had pics. My son worked his ass off for us documenting this event. I had no control as to what was being photographed. He did a fantastic job Way to go Killian!! I couldn't ask for a better son!!
Ribs rubbed nekid with Mad Hunky™ rub. Ribs went 4.5 hour. Checked with a tooth pick at the 3.5 hour mark and glazed with "Two Irish Fools Chipotle Swagger™" BBQ Sauce Turn in at 12 pm
some turn ins at the judges tent. I guess we did not get pics of our chicken. Stills that is. My son also took 2 hrs of video footage we have yet to work on. I will share it when we do.

Butts getting CLOSE to turn in time!
Unfortunatley we hit a bad stall and this is the best temp we got from our butt. 14 hours later. We cut her as close as we possibly could,to get the temps higher. It was a bitch to pull but we did it.

Our Vending table. 2 dollars for 2 oz. Health Dept. requirements Sold every last bit of meat from chix to brisky. Except one brisky. 105 dollars after it was all said and done. Had requests to buy the bbq sauce. Next time we will sell it
