That's some great eating. It's great fried with eggs or on an BLT.

Highly prized by the Italians to make guanciale. Been trying to get some jowl for a long time to make guanciale, but no luck so far. Should be delicious.

Why is Jowl bacon so hard to come by???

The butcher always keeps the best for himself.

The meat companies make recalled hot dogs with it! I have had it a few times since I know some butchers.

Throw a hunk of it in a pot with green beans and onion and let it cook for hours!
