My oldest son is gonna be home for Christmas and loves spicy pickled eggs , and the guys from my dart team been looking for some too , so I thought I better whip up a batch and thru in a lb of my smoked pepperoni to boot .
I kicked the cupboard and the fridge and put this recipe together for 30 eggs:
5 cups vinegar
1 cup water
1 small can sliced jalapenos (with juice)
6 cloves garlic crushed
1 small onion sliced
1 stick celery chopped (with leaves)
1 small carrot sliced
3 small dried chili peppers
2 TBS pickling spice
1 1/2 TBS sea salt
1 TBS white sugar
2 tsp course ground black pepper
2 tsp whole black peppercorns
1/4 tsp celery seed
cook and peel the eggs put into gallon jar with the japs and sausage , bring all remaining ingredients to a boil , let cool slightly ,then pour over eggs , roll the jar to mix well and let cool , place into fridge and let nap for at least 3 weeks ... I shake them every so often .
