  • Hot Water Cornbread

    I have been asked a few times what this is and how do you make it.... Hot water cornbread (Scalded Meal) is a true southern soul food.. Back 100 years ago this was about all the southern African Americans had money to buy was corn meal and flour.. It is a fast and easy bread to make.. It was a staple around holidays served with Collard or Mustard Greens...

    My grandmother made these when I was a young boy in East Texas...


    A simple small batch that will make 4-6 cakes..

    1 Cup Yellow or White Cornmeal
    1/3 to 1/2 Cup AP Flour. (For a less mealy cake use 1/2 Cup)
    1 Tsp Salt
    1 Tsp Baking Powder
    1 to 2 Tsp of your favorite seasoning (I used my new Southwestern Chipotle Powder)
    2 to 3 Cups Boiling Water



    Place all dry ingredients in boil and mix well..




    Bring water to a boil and slowly mix water into the meal... You want a thick sticky meal.. This will be something you will learn to do with the more of these you make.. At some point you will know exactly how much water to boil.





    Once you get it to the consistency, it's time to make the patty's... I use a small plastic hamburger patty press.... Wet hands so the meal does not stick.. Place a small amount into the press, then press the air bubbles out and make the patty about 3/8 to 1/2 inch thick.. You can just make hand patty's... I like the presentation of them looking round..






    Place you patty's in 375-400* hot cooking oil.. You can use any oil you with..






    Fry till golden brown on each side.... Drain on paper towels and serve hot with or without butter...






    You should have a crispy / crunchy outside and a hot flaky inside.. Serve with your favorite southern dish... Mustard or Collard Greens, Spinach or a good Ole' bowl of your favorite beans...






    Enjoy yourself some tried and true southern food..

    Excellent post!

    My family is from Texas, so I have heard of it, but they just make conventional oven-type cornbread, so I never knew what HWC was. Now I know!

    Plus, I can't wait to try to make it. Cornbread and beans is one of my all time favorite meals.

        Dang, I bet that's pretty good

        My friends mom used to make us something in cake form like that with cream corn & bisquick. Fried em up for us along with some trout caught that morning

              You got that right. For sure.
              Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
              My best asset however is the inspiration from the members on this forum.
