  • Potato Pancakes

    Or- Hunky Home Fries

    Can be served with syurp if ya like <weird!>, but usually a savory with a garlic butter and some CBP as a side to a meal.

    4 Large grated potatos, rested in a collander and drained.
    1 teaspoon Kosher salt
    1 whole egg
    2 Tablespoons flour, or other binding starch
    Shortnening or fat/oil for frying

    Option: 1 small onion, chopped fine

    Mix all ingredients- heat skillet with oil/shortening, and drop in heaping tablespoon fulls of mix, fry to golden brown on both sides.

        I make fried potato cakes with left over mashed potatoes. Dredge in flour and fry til crisp.

        But I like this recipe.

          Now bein' a Northern boy..is that a "hushpuppy"? Or are those corn based?

            Hush puppy is cornmeal based, with fine chopped jalapeno peppers... Oh man.. get out the fish. Time for a fish fry.

              Now THAT I understand... mmm walleye season! I gotta snug up to the Capt... I lost my buddy who supplied me, and drug me out over the Fourth to Luna Pier area for a walleye holiday. He's in FL now... bastage!

                had my fish fry last nite-yumm, I love patato pancakes from leftover mashed-baking powder is the key-helps hold them together-my neck of the woods Rich your making a hash brown. and with gravy OH YA.

                    They turned out great, or at least that's the feedback I got. :) I did make a couple per the recipe you provided, then a couple with some fresh, bruised rosemary, and then a couple with the rosemary AND sauted mushrooms blended in.

                    Good eats for sure. Thanks for the recipe and the idea. :)

                              That's how my Momma makes them. I'd use syrup every now and then, but mostly ketchup.

                              I'm going to try these though when I get my Smitty's and throw a dash of it in!
