Im a big fan of making salsa using items I smoke first.
This batch is some hlaved tomatillos, halved tomatoes, halved jalapenos, halved onion, and a head of garlic. Drizzled with some oil, and tossed the pan on the WSM for 2 hours.
I then tossed everything in the food procesor(peeled the garlic first), and tossed in some cilantro, and the juice of one lemon. Results... smokey, garlicy, and packing a punch. Went really nice with chips and some chopped pork tacos last night.
I brought some with some chips for lunch today, I also have (2) carne asada tacos from La Pasadita Chicago(east side) as well..
