Well, I don't know if yours is anything like mine, but I started getting black flakes on my food. I have an ECB and the coating on the inside of my lid has started to flake off over time. I had to take a wire brush on my drill to clean it all off. Not sure whether it is smoke residue collecting over time or paint.

Had this happen once when I turned on my propane assist on my stick burner. Bugs got in the orifice and restricted air, so I got soot. Is it a gasser?

Well- fire up yer gasser. Look at flame. Should be blue, not orange.

Also, you should be using fairly dry wood. In a smaller smoker this can cause soot as well.

When I got the soot my flame was orange. When it's blue it's getting mixed with the proper amount of O2. In fact, my gas companies name is "blue flame"

No harm, just tastes like crap. Sounds like you need to open your air vent as your burn is too rich.
