            Thank you guys, I was really excited to try the yoghurt in the brine, and I was really pleased with the way it turned out. I do love a buttermilk brine and was interested when I'd read that dairy products are the best to tenderize meat with. Now how to get cheese in a brine?

              You want to tenderize, get you a papaya. Clean it, mash it up an put somethin real tough in it overnight. Will make a mush outta brisket....if ya want pulled brisket.

                I know of this, and once again, never tried it. Kinda tough to find up here, butt they do show up once in awhile.

                    I boned out a few lamb thighs and cut them up into chunks for the freezer

                    Ground one up to make a Shepherd's pie the other night. My picky son actually likes lamb
