  • Stuffed Shrimp

    I decided to take a little time and make this dish for Pam. I took a few of her favorite seafood dishes and combined them.

    I started with some 12-15 count shrimp and bay scallops


    Then made a batch of my dressing/stuffing


    Next I cleaned, de-veined, & butterflied the shrimp
    Then rolled a scallop in the stuffing to form a ball
    Now placed the scallop ball on the seasoned butterflied shrimp


    6 stuffed shrimp plus an extra scallop ball in the center of the dish


    Stuffed scallop shells and stuffed shrimp topped with fresh orange zest


    Keg is heated to 425° using RO lump and orange wood

    Just before placing the dishes & shells I drizzled them with melted butter w/white wine & lime juice added


    Hot off the Keg and served with fresh fruit and a remoulade sauce for dipping
