  • Picnic Pork Shoulder

    A local grocery store has these on sale. Do you cook them like a butt or is there another process? What about foiling? Yes or No?
    There are averging about 18 lbs.

    Yep...cook 'em like a butt. They skin-on? I'd prolly wanna make a couple hams too. Hmm someone did these a while ago..I'll try to find it.

        the ad just says whole picnic pork roast. If the skin is on, should I remove it?

          Yeah..along with all but a little of the fat cap. Very little... the cap isn't doing much for you I have found. You may get some portions of that cut lower in the leg that might need slicing.

            Agreed, bout 1/4" fat or less is plenty, though some folks do leave the skin on and score it deeply to make sort of a cracklins type of outside to theirs.
            Never tried that myself though.
