I had planned on smoking this Loin, but I want to go up to the hospital to visit my Mom, so I decided to use my trusted Crock-Pot instead, but I decided to stuff this Loin, this is my first time butterflying and tying my own roast, which was fun to do, but I know I need a helluva lot more practice
I stuffed it with some Stove-Top Cornbread stuffing, ( I know boxed stuffing isn't the most delicious food in the world, but I have other things to do today ).
First I butterflied and seasoned with some MH ( of course ), salt, cbp, thyme, sage, onion flakes, and granulated garlic.
Then I added the stuffing, and some more seasoning...
Tied it all up, and Hunkified it some more...
Seared it, then into the Crock-Pot with some onions, garlic, diced mushrooms, and some beef stock.
This isn't a big roast, and my oldest just informed me that he invited some friends over to celebrate his girlfriends birthday, I guess they all get small portions, but then again the two teenage girls don't eat much anyway.
