    Wow, that's a fricken tailgate party

    Mac n Cheese is a easy reheater (I would make the cheese sauce green)
    you could do a dish like funeral potatoes, easy to toss together again easy to reheat. The make ahead reheat stuff I like the best for tailgating just cuz your busy already when your there.
    big green salad, with goat cheese, or feta cheese and candied pecans with a raspberry vinaigrette is a nice different salad.
    Or you could roll with like a "skyline" chili that you put over spaghetti for the stick to your ribs warm comfort food too....
    The crab boil sounds like a good idea as well....
    Whatever you do come up with, take lots of pix and let us know! I wish I was going!!! Go Fighting Irish!

      assuming you don't wnat to do it the easy way

      How about pulled lamb ?
      unusual for the states. best tasting meat you can bbq. And cooks as easy as pork shoulder.
      That and a bathtub of lobster would be all I'd need to eat :-)

      And a bunch of mini-sweet pepper abts for those who need veggies :-)

                I know, we're playing Pitt. I don't think there are any significant Indiana foods, and Pitt would be just the French fry sandwich thing. Still working on menu...have til Wednesday or maybe Tuesday to figure it out.

                  Made crab soup last night and create dried beef today...got three whole rib eyes...got Italian sausage fried up for sausage an pepper sammies

                        curious about the dried beef dish.

                        I get the dried beef sliced and fried - I could eat a lot of that.
                        So what's with the milk ?
                        Do you eat it like soup/stew ?
                        Or reduce it down till it's really thick and stick it on a sandwich ?
                        Can't really see where it's going

                          CA not sure want shell's plan is but we usually serve that dried beef over toast or biscuits.

                              We reduce down and put over toast usually, for this trip we didn't have a toaster to cover toast for 48 people so we are frying potatoes and putting over that.

                              SOS is similar in the military, but it's made with hamburger, had a lot of that in my day! Down south it's sausage gravy. Dried beef is expensive!! $11.99 per pound, got 5 pounds.
