  • Pork Shoulders

    I've rubbed and injected a couple of pork shoulders to be smoked tomorrow morning. This will be my first attempt at pulled pork. Wish me luck!

    I used apple cider for the injection and plan to spritz them with a 3:1 mix of apple cider and Capt. Morgan's spiced rum and plan to smoke them with apple wood. By the way, apple cider with Capt. Morgan's is a tasty beverage too.

    I plan on using a vinegar based finishing sauce once it's pulled and serving it with a choice of my standard sweet Q sauce and a Carolina mustard sauce on the table.

    I also made a red cabbage slaw to top the PP sammies.

    I will post some pics when I get a chance. Hopefully it comes out as good as I expect it to. I am excited about eating some smokey goodness.

      Hmmm Monroe's not that far, really...

      Remember Smoked-Meat's on 24-7 if ya need anything, or just wanna jaw a bit :{)

        Rather - are you using a spice based bbq rub on your pork shoulder.
        (nope, that still sounds almost rude lol)

        But are you ?

              Got up today at 0545. Took the shoulders out of the fridge (still wrapped from last night) and set them on the counter while I prepared the MES.

              About 0630, I unwrapped them and added another light coating of rub and placed them on the racks. At 0645, I confirmed that I had smoke and the temp was right, about 235. At 0650, they went into the smoker.

              It is now 0720, the IT is 52*F and the smoker is at 238*F. I just added some more apple wood and now I am going back to bed. 0545 is way too early on my day off.

                Sounds like you're going to have some great pulled pork. We would like some pictures just to drool over.

                    Sounds like a perfect start to the day! If it tastes good in a glass, it's good enough to be AN injection. IMHO
