  • Smoked a spiral cut smithfield ham (moved from some long lost site)

    Dateline 4/11/2009

the in-laws asked me to smoke a ham for this last sunday. I didn't have time to do my own ham start to finish so i picked a 10# spiral cut ham.

Got the smoker up to about 220 - 230*, Threw that bad boy in. as it started warming up i put together a brown sugar, peach glaze. nothin' special can of peaches, a fist full of brown sugar, allspice, cloves, ect.

mopped that puppy every half hour, four and a half hours later it hit 160* interal, top it in foil, laided a couple of towels over and off to the in-laws we go.

    Final product looked like this

it was gone in short notice

thanks for taking a peak at my project

it turn out very good but i may favor my own cooking.

a couple of items that i shoud have mentioned is i did truss it up to prevent the slices from seperating and i cooked it just like it is setting in the picture. both these things were done to help maintain the moisture in the ham.

Oh I see the string on further review.
Very nice, they are ok (with spicy mustard) but I always thought they needed something, now I know what!

Yoshida's made a huge comeback here. the namesake bought back the company. If you can't get it where you live or can't find an online shipper let me know I live in Oregon and its very easy to get and I could mail it.
