One of the sides I tossed together while the smoker was going on Super Bowl Sunday was an easy version of beans and rice.
I just stirred together a can of black beans and a can of red beans (rinsed). Some instant brown rice, some chicken stock. A bunch of homemade chicken kielbasa, a diced jalapeno, diced bell pepper and some red onion. Mixed in garlic, black pepper and some cajun seasoning.
Covered with foil and tossed the smoker for about an hour. Then stirred some more and left the cover off just a few minutes for a hint of smoke.

Hey Wu, if you have the amounts of ingredients you used, post them. I showed this to the wife, she said it looks really good. Would like to make this sometime as we often do several pot lucks thru out the year.

I used:
1 15 oz can of red beans (rinsed)
1 15 oz can of black beans (rinsed)
1 large red bell pepper
1 jalapeno
about 1/3 of a red onion
about 1/4 cup green onion
2 cups instant brown rice
2 cups chicken stock (the amount needed to cook the rice, but then I poured just a little extra in...maybe 1/3 cup or so.)
I didn't weigh the homemade sausage but it was about the same as one of those Hillshire Farm horseshoe shape Kielbasa
I also dusted the mixture with granulated garlic, black pepper and cajun seasoning.
I think that is everything, but you could really switch it up with lots of stuff.
