Smoked my first BBB on Sat. ended up with 22#s sliced and 1# ends and pieces. I used the HM brand for two pork butts and with Ritchtee's kind offer I used some of his seasonings for the other two cuts of meat.
I rinsed and patted the meat dry after the 14 day cure. Fry tested the meat..MH was slightly salty and "hammy" and MH was sweeter and had more flavor. Thanks to some quick replies Sat. morning the meat went into the smoker using apple wood and everthing went well. Let rest in fridge O/N and sliced on sunday and had many samples
. They were both very good Rich's seasoning had more flavor and I sliced it a bit thicker because the meat was almost a CB cut.
Bottom Line if you haven't made BBB yet ..what are you waiting for??
