OK, simple, easy and quick to make, but one of my favorite salads during the summer with the fresh supply of cucumbers and tomatoes (and I know a LOT of you have those!).
It's very cool and refreshing for dinner or supper on a hot day!
Dice a tomato and cucumber, add a little green onions then use your favorite dressing to coat (not drown). I like to use either Kraft's Sun Dried Tomato Vinaigrette or their Roasted Red Pepper. Mix together with some salt and fresh cracked pepper then let chill in the fridge for a couple hours.
This was dinner a few nights ago, grilled pork chops, fresh corn, taters and bacon roasted in foil on the grill and the salad. Oh, and Heinz ketchup for the taters.

Looks delish. I have a pitifull garden this year on a counta the cool and very soggy spring. Not even a mater bloom yet and outa a 20 foot row of cukes I got two plants. Really looks refreshing..................
A killer summer salad for anyone. Pickin' maters here now but gotta buy the cukes. Like ta throw in fresh chunks of mozzerella with rice vinegar and EVOO. Maybe even a few pine nuts if I'm in a rowdy mood. yeah, throw 'em in there.

Thanks Everyone! And WOW!!! ...you guys got some great ideas. Never thought about a little cheese and I love cheese! Squash and zucchini would be pretty tasty, too. Gonna have to try to mix it up now!

Didn't grow any cucumbers this year (wish I had now) so I'll have to pick some up down the street.
We really enjoy that for a summer salad also. My wife likes to use red wine vinegar and oil for the dressing. She also adds a few leaves of basil to hers. We haven't had any yet this summer so thanks for the reminder.
