    We were getting to the end of our sausage making and had an odd number of pounds left. Needed a recipe by the pound and Scott's fit the bill.

    Fishawn Kolbasz

    PER POUND:
    1.5 t Morton's TQ
    1 t Garlic
    1 t Onion
    1 t CBP
    1 t Paprika
    1 t Jalapeno sauce
    1.5 t Smitty's
    1/3 beer to mix spices &* cure in

    Used 2 1/2 # venison, 4 1/2 # pork (7 # total) and one can beer. Didn't have or know what he meant by jalapeno sauce, so skipped that. And for good measure added 1 cup of powdered milk.

    Thought I had a finished pic, but guess not. Have something planned for it this weekend, so I'll get one then.

          Another variation is to use half..or ALL if ya like..Segzed HOT paprika. That stuff's got a bite too :{)

            Passed on to my Grandparents- altho I never got a recipe...I got to eat it. And that with a little work and trials- was priceless!

            Those look great Ray. I made a batch for a customer a couple weeks ago... did not use binder tho, and went a bit light on the pork, so it tended to crumble a bit, but the vennie fit right in with the flavor for sure!

              This had a lot of pork just because that's how it worked out. In the future I'll prolly use a 50/50 mix and the powdered milk. Really like the powdered milk. It makes a nice smooth texture and keeps it moist. Readily available too. Thought the venison worked well with it.

              Have a couple of dishes planned for it. If it works well in those, I'll definitely make more. Thanks again.

                A traditional dish if made fresh is with kraut, of course, or a Hunky stew called lecso... altho this recipe does not call for meat. Sometimes Grandma'd make it with a can (GASP) of corned beef too...

                        No. Can't stand oatmeal. Sorry CA, I'm sure it works great, but none for me.

                        Yeah it does. This has a good afterburn to it. Just scale it back to about half what's listed and do a fry test before stuffing. Can always add more.

                            The heck with a pre-made package for my first batch this weekend, I think this has made the top of the list. What size casing should I be using? 33mm should work, shouldn't it, as that's what I picked up last week? May be a stupid question, but want to be sure.
