  • Smoked Ham & Eggs...

    Smoked up aboot a 4lb ham last weekend along with some cackle berries...

    Hit the ham with some rub & onto the Horizon along with the hen fruit...


    After aboot 3 1/2 to 4 hours with some hickory...


    Made up some smoked deviled eggs...


    And for lunch today, a grilled ham sammich with swiss & muenster cheese & a couple of deviled eggs...

                        smoked eegs

                        By smoking RAW eggs they come out like hard boiled with a light smoke flavor. You can increase the smoke penetration by soaking the eggs in a viegar water mix for 30 min to 1 hour before smokeing. The vinegar will etch the shells and alow more smoke to penetrate. The eggs will be great.

                            the smoked eggs are very good, I did a dozen the other day and forgot I put them on the smoker. I put them on about 0900 am and didn't remember them until 2000 hrs.:)
                            They were a little rubbery but still had good flavor.

                              Ummm, not 'crackle' berries it's CACKLEberries. Y'know, hen fruit, unborn chickens?

                              Nope, I don't inject the cackleberries. If you can figure a way to do it without making a helluva mess I'm listening.
