Chilli Jam
Decided to knock up some chilli jam for a condiment .

As Gordon Ramsey would say..... Chilli jam....... Fuckin done!
Cooling and ready to jar, it's mega citrusy from the lime leaves, lime zest and juce, lemongrass. Then the ginger garlic an sesame oil takes over, then a big hit of sweetness followed by a intense chilli and seshuan pepper burn. Super happy with the result

Never tried chili jam. Sounds interesting.
Recipe maybe since I have some lemongrass growing in the spice garden.

It's loosely based on this but I added more fresh chilli, dried chilli, chilli flakes and seshuan pepper.
Plus a few other goodies
I also made a lot more just got inspiration from this.
