  • Homemade Speghettie Sauce with Meatballs and Checkered Past Italian Sausage

    Well time to replenish the spaghetti sauce for the winter, with the weather rainy and yucky outside figured today was as good as any!

    So I like to make the meatball and all so here is a shot of everything!


    Okay first the Meatballs... here is what goes into them!

    Meatballs:
    4lbs ground beef
    1.5 pounds ground pork
    2 TBS garlic
    1 cup Locatelli cheese
    4 eggs
    1.5 cups seasoned bread crumbs
    Onion powder
    Garlic powder
    Salt
    Pepper

    Mix all up real well.


    Make a test pattie and give it a fry with some onion to season the oil.

    Make a few dozen balls a bit bigger than a gold ball and give a quick fry to make a crust on the outside.


    Cooking!


    Finished up!



    Got some of Checkered Past’s Italian sausage season in the mail the other day!! WOW this is good stuff. Mixed it with 1.5 pounds ground pork last night and let get all happy overnight. Still waiting on finding a good sausage stuffer.. soon… so I just made some little had links and gave them a cook.


    I wonder if this stuff will be available soon to buy??


    Here they are all cooked up.


    Got out a fresh Ham Shank from my little piggy that went to the market… seasoned it up and gave it a quick fry to brown all sides prior to tossing in the sauce for a good boil and flavor! Oh it adds some great flavor to the sauce!



    Now that all the meat is cooked add some paste to the oil and a few chopped onion from the onion you use to season the oil. Mix all up and bring to a “boil” and then I add a ˝ cup red wine. Bring to a boil and then add your tomato puree!


    I had enough fresh for half of this pot… fresh maters form the garden come in handy this time of year.. I added about 4 cans of puree as well.. about a 50/50 mix. Bring to a boil with meat in sauce at least most of it… Boil for one hour and then reduce to a simmer for the next hour and an half.. Stir every 10 minutes!! Add some fresh basil and season to taste! Here it is finished simmering.


    Now on to the main course!!
    Ravioli!! Yumm!!


    This is some good stuff right here I tell ya! Make a bunch and freezes well. Should have enough for about 9 meals for the Fam of 6!. Thanks for viewing and have a great night!!

      looks great but......whose got "GOLD" balls just layin' 'round fer measuring meatballs in today's economy!

      Make a few dozen balls a bit bigger than a gold ball and give a quick fry to make a crust on the outside.

          By God... THAT is a sauce! You did not add a few anchovy filets tho?

          Try it! It's remarkably similar to the sauce I make... bet you'd dig it.

            PS: I save my pork butt bones from sausage making for the simmer... shame having to toss in a hock.

              Yeah... I have a few extra from the pig... only so much bean soup one can make... I have one from the whole ham for Christmas... so should be okay..
