              Thanks folks, it was very good. My wife and son are the ones that eat more sausage than bacon, I prefer the bacon. They both agreed it was very good and glad I made some. I also tried it and found it very tasty. I made the sage reg, Thanks again.

                        I could not tell you if it was the same or not but I can tell you it tasted real good..... I have not had Jimmy Dean for some time and I needed some sausage for the kids so found this a while back an book marked it for a later date...thanks to Fish for the original post a while back

                        Here is a copy of it.. I did not add MSG.. went with a bit more salt...about 1.25 as recipe calls for and then I smoked the patties not fried... so that adds flavor as well.... Hope you enjoy!! the pork I have is much leaner as well. I am guessing around a 85-15 mix... much healthier is you ask me... I do not get much shrinkage... with my sausage....

                        Jimmy Dean Sage Sausage Clone

                        - Per 16 ounces ground pork 45% fat
                        - 1 t Salt
                        - 1/2 t dried Parsley
                        - 1/4 t rubbed Sage (or more)
                        - 1/4 t fresh coarse ground Black Pepper
                        - 1/4 t dried Thyme (or more)
                        - 1/4 t crushed Red Pepper flakes (optional)
                        - 1/4 t Coriander
                        - 1/4 t MSG (Such as Accent flavor enhancer)

                          Yeah that would work

                          Guess the coriander is used as a cheaper nutmeg/mace substitute.

                          I've made very similiar sausage on the fly - as it were - for fatties. But never with that kind of suicidal fat content

                            I used straight pork shoulder, not sure what the fat ratio is on one of those? Everything I have read says it's between 12 - 15 % fat. Didn't get much shrinkage either...
