  • Bacon Wrapped Beef Shoulder Tender 3 Ways.. Pic Heavy

    So went down to the local grocery store where why have a good selection of beef cuts you do not see everyday and are still very reasonable in price and they do not inject the meat with the water solution. Was looking around and saw three of these Beef Shoulder Tenders.. had no idea what they were but the price was right and they looked good so I said what the heck lets make this happen...Before I left i asked the butcher if they went by another name and he said well you can add roast to the end of it if you like... Looked around on here when i got home and see a thread from way back that mentioned them but did not cook with them... so looks like this might be a first..

    so here is what it looks like, not real big thus I got three of them.. under 8 bucks for them all..



    So I am going to just plain bacon wrap on one. No biggie there..

    the other two I will cut a pocket into them and stuff them.


    So for the first it will be a shrimp scampi stuff. I did a very light saute of the shrimp until they just start to turn pick.


    Then let cool and stuffed into the beef with some hunks of garlic in there. Did worshy, butter me tender rub, and then wrap in bacon ans season with T-Dust.


    Next I am going to do a Blue Cheese and Nine Hour Burgundy Mushrooms stuff followed by a bacon wrap.

    So I cut a pocket ans stuffed with the blue cheese and mushrooms. For this I seasoned with jalapeno salt and worshy, wrapped in bacon then a dusting of T-Dust.


    Here they are all wrapped up and ready to the weber indirect at 325*


    About 45 minutes later and a quick trip over the hot coals to crisp up the bacon we have this!


    Okay now for the money shots..
    the plain bacon wrap.


    then for the shrimp stuffed... I went ahead and finished off the other shrimp and tossed on the side.


    Now for my favorite the Blue Cheese and Mushroom stuffed tender


    Just look at the blue cheese oozing out...


    And on to the plated shot..Had a slice of the shrimp and the mushroom. the mushroom was my favorite, kids like the shrimp but that is not a shocker there... they will grow to like the blue cheese.. I know I did not like it as a kid..


    The beef as very good. It was tender not nearly as tender as a tenderloin but good... If you have every had the beef medallions kinda reminded me of those... Would not hesitate to get this cut again. the wife gave it two very big thumbs up as well... she like the mushroom one as well... Kinda was surprised there...

    I get cuts called butt tender...Part of the tenderloin...Yours may be something diff...Whatever...Looks awesome...Ill take a big slice of the blue cheese one if you don't mind...

                              Never saw that cut either, I guess I should pay more attention. Great job on all 3 versions Brian, but the blue cheese, mushroom, T-dust one would win my vote.

                              Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
                              My best asset however is the inspiration from the members on this forum.
