First...I didn't want to have another canning project this year...Thought I was done with that...
Second...This is the time of year that when frost threatens I go harvest all the green tomatoes for frying and other things . but not this year...With all the fantastic weather we have had the green tomatoes all turned red...And that doesn't make me happy

Too many ripe tomatoes...
Lena suggested I make some Marinara sauce...Crap...Sounds like a lot of work...Never made the stuff before....So I searched a couple recipes and then proceeded to make my own recipe...That's just me
Started with 10 plus pounds of cherry tomatoes...
Ran these through the food mill to separate the seeds and skins leaving me with 3-4 quarts of juice...
Put the juice on a low simmer to start the thickening...
Meanwhile I cooked three stalks of diced celery in olive oil...
Then added two diced onion and at least 14 cloves of garlic for a quick cook...
Dumped that all into the simmering juice including the olive oil...Let that stuff simmer while the rest of the stuff came together...
Then I addressed 15 plus pounds of slicer tomatoes...
And of course I roasted some garden hot peppers
And roasted the tomatoes...
Tomatoes and peppers were skinned and chopped small...Most of the seeds and juice was squeezed out of the tomatoes...Added all that to the simmering juice and raised up the heat some to thicken the sauce...
Looks near what I an looking for...
So I thinned it with a cup of red wine and thickened it some more...
This stuff better be good because at this point I got nearly eight hours invested...
Well There was supposed pics of the finished jars but...
I guess we all know what jars filled with sauce look like...
Ended up with 6- 24 oz. jars and one half pint that I think will make some kickin meatball sandwiches...
