I was doing a bit of freezer diving looking for some gator or something to throw on the grill...
And I found this Smoked, wrapped in foil, and frozen in April...WTF?
Of course burnt ends was the first thing I thought of...
Looks like the real thing...
But that's not how things went
Used my P.O.S. slicer and whacked it up...
Covered the slices with a slurry of spicy bbq sauce, beer, and beef rub...
Just like I do my burnt ends...So it's the same...Right?
After a few hours in the Longhorn the fat had rendered out and I had this mix of slices and pulled beef...
I kinda expected that...Doesn't look like burnt ends
Meanwhile over at the Green Machine...
It's BACON!
Bacon removed and shallots in the drippings...
Then some garden fresh baby lima beans...
These are not the dreaded Foordhooks that obviously traumatized Rich at some point in his life...
Theese are fresh, tender, and tasty baby limas...
After the beans cook for a while I tossed in some cherry tomatoes...
Added the lid to the pan to create some steam and let them finish indirect...
Beans out of the way...
Time to burn some bread...
Pile on some of the "burnt ends" (?)
Indirect on the grill to warm the sandwich and melt the cheddar cheese...
That's what I'm talking about
And on the plate with the lima beans dressed with some good Parmesan and the BACON!
And this begins my eleven days away from work...
