Rack this one up to the experimental part of my little brain.....
..... Started out going to make regular Hunky Kolbasz per RichTee's recipe, but in snack stick size in Sheep casings. Got a little adventurous
and decided to throw in a couple of Mod ingredients. Well, it's over now & they are in the smoker, so I guess I have to live with the outcome.
The fry test had LOTS of flavor.... Pork ground first through medium plate, spices were sent through the spice mill then added & mixed by hand, then through the grinder with the fine plate for snack stick size & stuffed into Sheep casings......
Hunky Kolbasz for 5# Ground Pork
5 tsp Garlic Powder
5 tsp Paprika
5 tsp Onion Powder
5 tsp CBP
1.5 tsp Per Pound of Tenderquick
Ice Water (about 3/4 cup)

MODS ADDED
5 tsp Reveo Jamaican Jerk Dry Marinade
5 tsp Chipotle Powder

This one might be a little better...... SEASONING!!!!!

Let's hear it for Pork & Seasoning mixed & through the grinder....

Getting going on the stuffing part, starting to feel like its all worth it now....

5# Stuffed

Rest in the fridge for a couple hours to dry a bit, then onto racks

Into the smoker @ 120* for a couple hrs to dry, then smoke & heat

I will increase the heat on them by 10* every hour until they hit a minimum of 152* then into a cold water bath, or maybe not??????
