  • Apple Cinnamon Breakfast Links

    My grandson was joking with me the last time we made sausage. He was eating apple cinnamon cheerios or something and asked if I could make a sausage like that. What's a grampa to do?

    Had about 6 recipes saved I thought were good cadidates. So late New Years eve, after way too many beers, here's what we came up with.

    5 lbs pork
    5 tsps salt
    2 tsp ground black pepper
    1 tsp dried sage
    1 tsp dried thyme
    1/2 tsp ground cinnamon
    1/4 tsp ground ginger
    1 1/2 harrelson apples shredded
    5 generous Tbls apple cider mollasses

    Used LEM's 20? mm sheep casings. Good thing I wrote down what we put into it. Couldn't hardly read my own writing. Hehe.

    Should have seen the look on his face when he said, "Hey.....it's apples and cinnamon". For once, he didn't steal all the bacon.

          Killer SAUSAGES!

          I think this may be just enough to convince the wife that we do need that grinder and stuffer.

          She loves the little maple sage breakfast sausage. That we get from a local butcher. But we can't buy apple cinnamon!

            Hmm - nice looking recipe.

            I knew I needed to buy something - cheap cider !

            So can you taste the cinnamon - doesn't seem like much ?
            I'd have thought 1/2 - 1 tsp.
            I've got a load of dried apples I made 2010 - but I'm betting the majority of flavour came from the cider syrup.

            Right - job for tonight, go get some cheap cider, make apple molasses :-)

            Oh yeah and have some 'yeah we can make that'

                  Now that you mention it, we did add more cinn after the fry test. I'll edit it to 1/2 tsp. Blame it on the beer. Thanks for the reminder. Didn't want it to overpower the apple flavor, but it does come through.

                  One of the recipes I had saved used dried apples. So yeah, give it a try.

                  Tasted great. Like apples and cinnamon. Even the picky 3 yo was eating them like it was his last meal.
