Today I made 3 racks of babyback ribs. I smoked them for 5 hrs total, I didn't foil them. Ran the kettle at 250ish degrees. Here's the pics and thanks to Mike for the coal basket and firebricks, this set up works wonderful. I had to do surgery on one of the racks to fit all 3 on the 22.5 OTG kettle.
Here's the victims for today. Picked these up at restaurant depot for $2.79 a lb.

About 2hrs in added some charcoal and spritz with apple juice

it's a homemade rub, I just went a bit heavy on the sugar.
Ahhh... prolly the cause of the bit of charring ya got. Especially on a kettle...they run hotter than yer typical smoker does.
If you like the sweet...here's a suggestion: Make up your rub WITHOUT sugar, and add that sugar on 2/3 way thru the smoke or so. Give 'em a mop and apply the sugar.

I would disagree with that as 250 at the grate on a Kettle and 250 on the grate in any other smoker is the same, imo.
Great lookin' ribs Mario Glad the young man enjoyed the fruits of your labor and the rest of the family as well. I'm sure he's a great helper. Glad the set up is workin' out for you. Let's see if I can throw some ribbage your way.

Nice lookin ribs Mario. I'll throw some your way! Keep it up. I second what Rich says about putting sugar on toward the end of the cook. The bark won't be so dark and burnt looking. Give that a shot next time and you'll see what we're saying. Either way, the little guy looks like he approves!

I can't seem to get 250 very easy on the kettle... I guess I just assumed he was around 300, which is where mine seems to like to hang...
Not meaning to jack your thread, Mario but Rich, you might want to start out with a bit less fuel as you can always add more if the temp is not quite where you want it. If doing "indirect", foiling the coal grate is paramount as the air flow is uninterrupted and temps become much more stable. Lump is tougher to control due to the odd size pieces but it's pretty easy with briqs. And now back to our regularly scheduled programing.

Agree with Mikey, you don't need much fuel to run the kettle at 250. Probably 15-20 briqs and keep the vents almost closed.

I PM'd Mikey... I am a newb at the kettle. And all I have done is yardbird...which...works out great with 300-ish. Ribs... I'll use the WSM or Brinkmann. But I guess I should do some ribs if only for the experience.
