Hello everyone
the last couple of weekends I have been busy making Sausage I also did some smoked albacore tuna bellies and some Landjager and some snack stix
the Snack stix are pre mixed seasoning from PS seasoning one is 10 pounds of Tex Mex Snack stix and one is 5 pounds of Willies snack stix mixed 60/40 Elk and Pork butt smoked with Hickory
I also did some Landjager ten pounds they turned out Awesome did not last long around here used premixed seasoning from PS seasoning 60/40 Elk and pork butt
My Buddy Lyle gave me two Albacore tuna and I canned them and smoked the bellys they are Awesome I used a basic salt brine for 30 min and smoked at 150 until done they really turned out good
Today I am doing 5 pounds of Elk Jerky whole muscle meat jerky using the sausage makers Colorado jerky seasoning and smoking with hickory will post pics when done also have some ground meat jerky in the smoker using hi country seasoning sweet and spicy have four pounds of that in the smoker using hickory
The Tuna bellies sounds awesome also. I love the salmon/steelhead bellies smoked. Best part for smoking IMO. Still using Alder and Vine Maple Huey?
Haha Scott No Razor clam sausages I use alder sometimes mostly for fish I have used so much alder in my lifetime I dont care for the taste anymore I dont like maple or vine maple so I dont use it at all The Tuna bellies are Awesome will be doing them again will use apple or cherry next time tho the hickory was a little strong but good

Do it up right she will like it fine if I know someone does not like wild game I wont tell them what it is till after they eat it then you should see their faces :-) some of them still push it away tho but not many
looks really good, huey ~ i think i'll be doing some similar stuff with the extra deer in the freezer soon.
my wife spent years not liking deer, then i made some this summer when it was all we had in the freezer for supper. i didn't really do anything different, but suddenly she decided she liked it, even though it is the same north-central-montana, alfalfa-fed wonderful venison she's been "hating" all of her adult life. but now she likes it, so who am i to complain?
i might even be getting her a tag or two this fall when hunting comes around - it would be nice to have a hunting partner that smells nice for once!
