This recipe was given to me by my Mom & my Grandmother before her. I have not made it in a while but I think I'll be correcting that...
Here ya go, Padre...
4 eggs beaten
3 cups milk
1/3 cup sugar
1/4 tsp salt
2 tsp vanilla
2 tsp lemon zest (optional)
2 cups cooked rice
1/2 cup raisins

1 tsp nutmeg or cinnamon
2 Tbs butter pieces
Combine first 8 ingredients well & pour into a 2 1/2 qt. baking dish. Top with ground nutmeg or cinnamon & butter pieces. Set dish in pan of hot water. Bake in a 300° oven for about 1 hr. After the first 30 min insert a spoon at the edge of the pudding & stir from bottom to bring the raisins & rice up. Continue cooking until knife inserted into center of pudding comes out clean. Once done, let cool for about 20 min or so. Can be served warm or cold - delicious either way. Can be served with whipped cream if desired...
