Been canning venison for about five years now and here is a couple favorites that work well for our families, grandkids love it over Amish noddles plus it's fast and easy.
Canned Venison
In a sterilized pint Mason jar place ¼ sliced or diced onions, 1 chopped garlic glove, ¼ cup Golden Mushroom Soup,(do not add any water) 1 teaspoon low sodium, low fat beef flavoring granules, 1tbs Oilive Oil, 1/4-1/2 teaspoon sea salt, 6-10 turns of fresh ground pepper, 1/2tsp Celantro, ½ teaspoon Basil, ½ tps Parsley, fill with venison to 1” of top of jar after it has been packed down with a rubber spatula. Pressure cook @12psi for 90 minutes, let cooker fully decompress and cool on it’ own before opening up. Jars should pop or ping during this cooling period indicating a good seal. Jars that do not seal should be re-cooked or used right away. Follow all canner safety instructions.
Variation #2
