    Rinse.

    Smoke.

    Rest.

    Slice.

    Nicely played Scott.. I know I have enjoyed mine that I made a few months ago and time to make more.. Just need a sale on a few logs..

        That looks really good! I've made buckboard bacon but not Canadian bacon. Would love to make a pizza with some of that.

          Ever done the pea meal stuff? Adds a brown crust on the outside. Interesting. Nice work!

              This is so good. Pork loins are easy to find and often on sale. They’re thinner than butts, so they cure faster too. The Shooter Rick tutorial stickied in the bacon forum is so good, the furthest I usually stray is to swap out some brown sugar for maple syrup. I made a savory one a few years back, I prefer the sweet. The hardest part is the math if you need to swap out TQ for cure#1. I haven’t tried the pea meal.

                      Here's what I use to make Pea Meal Bacon, Great to pan fry in the morning.


                      Pea Meal Brine:

                      Ingredients:

                      1 gallon water
                      1 cup kosher salt
                      1 cup dark brown sugar
                      3 tbs cure #1 (pink salt)
                      1 tbsp all spice
                      1 tbsp juniper berries
                      1 tbsp mustard seed
                      1 tbsp whole coriander seed
                      1 tbsp whole pepper
                      1 tbsp whole clove
                      5 whole bay leaves

                      Bring all ingredients to boil and then simmer for 10 minutes, let cool and do the voodoo you need to!
