Bacon wrapped beef rolls stuffed with grilled onions and mushrooms.
I got inspiration for this from a youtube video the other day. They turned out pretty good and were very inexpensive. The bacon was the most expensive item.
I bought a package of beef cube steaks and pounded them out a little thinner.

I made a steak marinade with:
Olive oil
Red wine vinegar
Soy sauce
Minced garlic
Dijon mustard
Chopped onion
Worcestershire
Black pepper
Lime juice

Threw the steaks and marinade into a bag and let sit for 30 minutes.
Meanwhile I sauteed some mushrooms and onions and let them cool.

Loaded up and ready for rolling.

Wrapped, rolled and ready for the smoker.

Smoked over hickory for about 2 hours.

Sliced up and plated with roasted fingerling potatoes and broccoli.
