  • Marinated Wagyu Steak with Chimichurri Sauce

    I managed to get my hands on some Sher Wagyu Skirt Steak for tonight's dinner.





    Marinade Recipe

    1/3 cup soy sauce
    1/3 cup lemon juice
    1/2 EVOO
    1/4 cup Worchestershire
    3 Tbsp dried Oregano
    2 Tbsp minced Garlic
    1 Tsp Onion Powder
    1/8 Tsp Cayenne Pepper
    1 Tsp White Pepper



    I've also made some Chimichurri to go with the Skirt Streak

    Chimichurri Recipe

    1 cup lightly packed chopped parsley
    3 to 5 cloves garlic, minced
    1 teaspoon salt
    1/2 teaspoon freshly ground pepper
    1/2 teaspoon chili pepper flakes
    2 tablespoons dry oregano leaves
    2 tablespoons spring onions
    3/4 cup EVOO
    3 tablespoons sherry wine vinegar
    3 tablespoons lemon juice



    Wow! Big thumbs up from the family. The Skirt was very juicy and the marinade added great flavor. We had an extra piece of skirt that was crispy outside, I cut it when it was cold and it would have been awesome in a Thai Beef Salad, delicious flavors!

    The Chimichurri was fantastic, we'd forgotten how great tasting it was, well worth trying yourself.

    Oh yeah! love chimi sauce! did one a while back and I was eating like salsa!! It goes great on beef!!

      Skirt steak done right (and that was done right!) is a wonderment. Gonna have to whup up some of that chimichurri.

        It's the first time I've cooked or tasted skirt. I tasted great, I cooked it on the Grillgrates and it produced a really tasty crusty bark. The flavors became even more intense once it had cooled down.

        Be careful with the Chimichurri, it gives you incredible strong garlic breathe (I love lots of garlic) so best to do Friday or Saturday, so as not to offend work colleagues ;-)

            I don't think there is a bigger skirt steak fan than me, and you rocked that one man. Gotta try the sauce too.
            Lang 36 Patio, a few Webers, 2 Eggs, plenty of gadgets and a MES 40 Gen 2.5 electric for bacon and sausage.
            My best asset however is the inspiration from the members on this forum.
