Hi all, yesterday I cooked a meatloaf recipe that I had been working on in my head for the last week. 4.5 lbs. 80/20, slow cooked think sliced bacon (chopped) shredded medium cheddar cheese, Italian bread crumbs, chili powder, garlic, Worcestershire, eggs, ketchup all mixed up inside. This turned out way better than expected. It was savory, tender and very moist but held together well. I couldn't have been happier. My family loved it. My wife says it's her favorite cook so far.
