  • Nicks All Nighter Brisket

    For the August contest my 11 year old Nick did a Brisket. It was a 15 lb packer and took 15 hours to get to 195. No foil on this one but he injected it, made his own rub and tended the fire from midnight(when I fell asleep) till 5am. He slept from 4 till 9 then got up and finished it off. Heres a bunch of pics of my smoking buddy. He sure looks tired in the end ones.

        His brisket looks great. And he does look pretty tired there at the end. Just imagine how good his briskets will be when He is teaching his kids-he will have 20 or 30 years experience by then.

          how awesome is that? Keith you have to be so proud, heck of a job, that brisky looks pretty tasty. I just think it is so wonderful that he smoked that, mostly by himself.

                      Of course his favorite part was the fire. When he got up in the morning he went out to check the fire. The thin blue was humming along at about 250 when he decided to put in 3 pecan logs and a half a dozen pieces of crumpled newspaper. I guess because he didn't see flames so he thought it went out.

                      We experienced little temp spike as I was pulling out burning logs.

                      I will pass on the kind words and points to Nick. Thanks for the contest Ken.
