Been trying to get the wife to try oxtail for years. She must have saw something on Pinplace or something, because she informed me a few weeks back that she is no longer opposed to trying oxtail(previously, she was opposed because "yuck, its too close to where all the shit pours out....").....
Anyhow, I picked up aboot 2.5 lbs of tails today, and got started. Pulled them out of the package, and rinsed them off in cold water before tossing them in a 1 gallon ziploc. To the bag I added: juice of one lime, 2 tbsp soy sauce, 1 tbsp granulated garlic, 1 tbsp Badia Jerk seasoning, 1 tbsp olive oil, and a healthy amount of fresh thyme leaves. Tossed it in the refer for about 2 hours:

After a couple of hours, I started a small pile of lump on the Weber, and packed my Smoking Aardvark with a mix of pistachio shells, thyme twigs, allspice berries, and apple sawdust.

Put the oxtails on for about 90 minutes and let them get their smoke on:

Pulled them and tossed them in a hot pot to brown them a bit more, then pulled them out sweated 1 med diced onion, 4 green onions, 1 tbsp minced garlic, with some thyme. Tossed the oxtails back in and covered with water, added about 20 allspice berries, a half of seeded habanero, and let boil for 2 hrs, until the meat started to pull off the bone. No pics, my apologies. I then added one diced red pepper, 1 diced sweet potato, some baby carrots, 4 chopped green onions, another sprig of thyme, juice of 1/2 lime, and 2 diced romas, then returned to a boil.

Added in a can of Cannelli beans and a can of small butter beans, and let it boil another 30 minutes. Picked out as many of the allspice berries as I could find, then served over some Zatarans yellow rice. Was quite tasty. Next time, I wouldn't go so light on the heat.....
