Need some advice...

Looking for some advice please... I'm new to the smoking scene as we just bought our first vertical offset smoker. I was told that I can start my fire with charcoal, then use oak for my heat source and every two hours or so add some Apple wood chunks for the smoke and flavour. Is that accurate? We have a big BBQ this weekend with friends with lots of meat and we don't want to screw it up. [emoji846] Anyone who can help would be appreciated.
