      Ya good job man .now you got me up 2 hrs befor work finding info on cheese making and chee making supplies,,,,,dang it ,wife says if you can brew,make wine and smoke and cure i think you need to make cheese. Now what is the difference in Flake salt Im guessing non iodinized?

      Thermophillie, Mesophillic,,,,Sheesh a whole lot of hitting the books and internet on learning...insert shrug ...bright blinking eyes. You have started yet again a new hobby...what size holes do I drill in my tupperware?

        Ok the salt from what I found(I had same question) is kosher salt. It is all I have used for cheese making. The big difference is kosher and the like don't have anti-caking agent in them. As for the mesophilic starters those are a bacteria starter. different ones are used for different cheeses. You won't need them till you have a place to "age" your cheese. which can be done with a small fridge and some controls. I have not done hard cheese yet but will be by summer time. My big thing is I have no humidity here so the cellar won't work. you need some where around 65% or so. The real artisan cheese makers will even have different caves for certain stages of cheese aging and different humidity. It will be a long time before I'm that involved. The size for a hole just needs to be big enough for liquid to come out. probably half the size of a bic pen would do good. Do not buy their starter kits. they are a joke. get your self some vinegar a stainless steel ladle with holes drilled in it and some cheese clothe. that's really all you need. You could make a little cheese press out of tupperware if wanted other wise you can just ring the cheese clothe harder.
