  • Dutch Oven Pudding Cake with Pecan, Chocolate and Caramel Topping

    Well I had wanted a Hornet's Nest Cake Saturday night but forgot ONE thing...butterscotch chips. But I had happened to go to town that morning and on an impulse buy while going through the check out, I had picked up 2 Lindt caramel chocolate bars so I used those.

    This is such a simple cake that is really good.

    Box of cake mix - I used Yellow this time
    Box of instant pudding - I used vanilla
    2 cups milk
    Pecans (I like chopped or pieces - they are easier to eat)
    And the Lindt bars






    I used a Dutch oven liner for this. I sprayed some oil in it so my cake wouldn't stick. Then poured 2 cups of milk in it and the pudding mix. Stir until mixed up good then add your cake mix and stir until mixed. It will be a thick batter. Sprinkle pecans on top. Then I cut up the candy bars and added them to the top. Baked in my DO at around 350 until done. Usually when you smell cake, it's done or almost done. But you can use a toothpick to test, too. This was delicious and I will definitely do it again.

    The topping was so good....crunchy pecan pieces and the chocolate and caramel were melted perfectly in all the nooks and crannies.

          I about bought one of those cookers but didn't/couldn't. I've been sorry ever since.

                That looks decadent.
                Wondering if this could be made in a deep cast iron skillet in the ceramic grill or heck even a pellet grill. Heat is heat right?

                    Yes, it can! Here's a regular cake I did in a 10" skillet on the kettle with chocolate chips and chopped up pretzels and mini peanut butter cups.

                            Becky as usuall a great post! Its been a bit since I cooked on a DO ( as I recall you needed to control how many coal on top and how many on the bottom.

                            Any insight would be great as this is going to happen at family dinner with grand kids,

                              that looks great. tonnage will come to me over it. for winter.. triple digits here forbid cooking in the home. gasser or one of the wood or coal grills for now.
