  • Chocolate Eclair Cake

    If you like Chocolate Eclairs from the bakery but you find them a bit pricy
    these days you can make this Cake which has about the same flavor.

    Chocolate Eclair Cake

    You need some Honey Graham Crackers, a couple of 4 serving French Vanilla
    instant pudding mixes, a container of frozen whipped topping 12 oz size, and three cups of milk, and a 16 oz container of chocolate fudge icing or a box of icing mix that will yield about the same amount.

    In a 8X13 glass or metal baking dish which is un-greased, line the bottom
    with Graham crackers.

    In a mixing bowl combine the two boxes of French Vanilla pudding mix with the three cups of milk and whip with a wire wisk or mixer until just beginning to thicken. Stop. Now fold in the thawed whipped topping until well mixed.

    Now, use half of the pudding mix to cover the layer of Graham crackers.

    Next, cover that with another layer of Graham Crackers.

    Next, use the remaining pudding mix to cover the crackers again.

    Next, cover that with another layer of Graham Crackers.

    Finally, take the chocolate fudge icing and cover the Graham crackers sealing it to the edge of the dish.

    This needs to sit in the Refrigerator overnight before serving.


    You may as well make two of these cause when word gets around.....

    Make a big pot of coffee too to go with it.

    Not a big sweets guy, BUT Choclate Eclairs is right up there at the top.... This sounds really nice.... Specialty baked treats are sure spendy .... I took my kid to a shop Saturday for a Gingerbread cookie (ONE) & it was $2.00

      A four inch square of this is satisfying for me. But my Propane Delivery man
      was by and filled my tank (summer fill up deal) and I always give him some of
      whatever I'm experimenting with. He went right through a cup of coffee and
      a 4x8 inch piece of this and would have gone for more. LOL

      He's a bear of a lad and could eat a couple sacks of groceries a day.

      I always print him a copy of the recipe for his wife so she can make it for him if he likes it.

      .....yep, she's goina be a busy girl.

          You are so right about this being addicting. This recipe was given to me about 25 years ago and was called "Easy As Pie Eclair Cake". Being just my wife and I, we don't dare make this unless we have company to help eat it. Thanks for the reminder. Maybe I'll get busy and make one this weekend for friends and family.

            I was just adding up the cost of making this and I'm figuring just a little over
            $4 bucks. I tried to calculate making the pudding from scratch and using a boxed Chocolate Fudge icing from Jiffy. But it's just to beat the ready made
            low cost stuff from ALDI's.

            WalMart does have the French Vanilla instant pudding for .50 c a 4 serving box.

            So, a 2.25 X 6.5 portion size yields 8 pc at about .55 c each.

            A 4.5 X 4.25 serving yields 6 pc at about .72 c each.

            In the University area down the road from me the Bakery next to campus
            sells their eclairs for around $3.25 each, but they are generously sized.
