I made this for my boss's birthday this week. Ale-8-One is a popular soft drink in Central and Eastern Kentucky. I've sent a few of you a bottle to try but if you didn't like it, please don't be afraid to tell me.
I do not like it at all, but I do like this cake.
I suppose you could substitute the Ale-8-One for another drink of your choice. The cake is really moist and I like the melted marshmallows in it and the icing. The icing also soaks in making it moist and gooey.



Ale-8-One Chocolate Cake
2 c. self-rising flour
2 sticks margarine
1 c. Ale-8-One
1/2 c. buttermilk
1 tsp. vanilla
1/4 tsp. salt
2 c. sugar
3 Tbsp. cocoa
2 eggs beaten
1 tsp. baking soda
1 1/2 c. minature marshmallows.
Mix flour and sugar together and set aside. Combine margarine, cocoa and Ale-8-One in a saucepan. Bring to a boil and then pour hot mixture over dry ingredients. Add baking soda and buttermilk. Mix thoroughly and then add beaten eggs and vanilla. Beat mixture until smooth. Add marshmallows, mix and pour into a 9″ X 13″ pan. Bake at 350 degrees for approximately 30-40 minutes.
Icing
1 stick margarine
3 Tbsp. cocoa
1/3 c. Ale-8-One
1-1 1/2 c. marshmallows
1 tsp. vanilla
1 lb. box confectioners sugar
Combine margarine, cocoa, Ale-8-One and marshmallows in pan and bring to a boil and remove from heat. Cool then add vanilla and confectioners sugar. Beat until smooth and spread on cake.
