  • Kentucky Ale-8-One Chocolate Cake

    I made this for my boss's birthday this week. Ale-8-One is a popular soft drink in Central and Eastern Kentucky. I've sent a few of you a bottle to try but if you didn't like it, please don't be afraid to tell me. I do not like it at all, but I do like this cake.

    I suppose you could substitute the Ale-8-One for another drink of your choice. The cake is really moist and I like the melted marshmallows in it and the icing. The icing also soaks in making it moist and gooey.








    Ale-8-One Chocolate Cake

    2 c. self-rising flour
    2 sticks margarine
    1 c. Ale-8-One
    1/2 c. buttermilk
    1 tsp. vanilla
    1/4 tsp. salt
    2 c. sugar
    3 Tbsp. cocoa
    2 eggs beaten
    1 tsp. baking soda
    1 1/2 c. minature marshmallows.

    Mix flour and sugar together and set aside. Combine margarine, cocoa and Ale-8-One in a saucepan. Bring to a boil and then pour hot mixture over dry ingredients. Add baking soda and buttermilk. Mix thoroughly and then add beaten eggs and vanilla. Beat mixture until smooth. Add marshmallows, mix and pour into a 9″ X 13″ pan. Bake at 350 degrees for approximately 30-40 minutes.

    Icing

    1 stick margarine
    3 Tbsp. cocoa
    1/3 c. Ale-8-One
    1-1 1/2 c. marshmallows
    1 tsp. vanilla
    1 lb. box confectioners sugar

    Combine margarine, cocoa, Ale-8-One and marshmallows in pan and bring to a boil and remove from heat. Cool then add vanilla and confectioners sugar. Beat until smooth and spread on cake.

    OMG Becky that made my mouth water. I have such a sweet tooth lately. A slice of that cake and big glass of cold milk. Thanks for the recipe. So what would that soda be comparable to? Seven Up?

      That's a nice looking cake.

      According to Wikipedia, Ale-8 could be described as a ginger ale, but with more caffeine, a fruitier flavor, less carbonation, and about 1/4 fewer calories than conventional soda.

      So maybe use 3/4 ginger ale, 1/4 7-up and a little less sugar if you can't get Ale-8-One?

        Excellent looking cake, Becky! If I make it, I'll use the Hershey's Special Dark cocoa. I really like the dark chocolate flavor.

          Well, I'm not sure what to compare it to. A lot of people who don't like it call it piss water or river water.

          I don't like ginger ale either so I don't know.

          I have never seen the dark cocoa in my store. Going to have to shop around for that. Thanks!

            Looks like a great cake. Didn't have any work today and went shopping and picked up all the stuff for one of my favorite summer cakes...lemon pudding cake. I went to Meijers but they were out of lemon cake. Had to resort to wallyworld, it was crowded OMG all them e-mails I've gotten about the people of Wallmart are true. I suppose I fit in pretty good with that shit eatin grin I was wearing. I may just go back for entertainment. Thanks for the recipe. I like me desserts too
