Bourbon Brownies With Chocolate Frosting Recipe Instructions
Ingredients
Batter
2 ½ oz. butter
5 ½ oz. bittersweet (70% cacao) chocolate
1 tbsp. Bourbon Whisky
2 large eggs
1 cup sugar
½ tsp. Vanilla extract
¾ cup all-purpose flour
½ tsp. Baking powder
¼ tsp. salt
Frosting
¾ cup chopped walnuts
3.5 oz. bittersweet (70% cacao) chocolate
3 tbsp. cream
Garnish
25/30 pcs. caramelized walnuts
Directions
Preheat oven to 375°F
Line a 9-by-9-inch baking pan with parchment papers. Make sure the sides are lined and let some paper overlap over the edges. Butter the parchment paper and dust with flour, tapping the excess out.
Place butter, chocolate and whisky in a double boiler and melt the chocolate.
Beat the eggs with the sugar and the vanilla extract until light and frothy, then add the chocolate-whisky-butter mix. Sift the flour with the baking powder into the preparation, mixing. Add chopped nuts, mix, then pour into the pan.
Bake for 15 to 20 minutes until the top is golden and flaky. Cool and unmold when fully cooled.
For frosting: melt the chocolate (microwave or Bain Marie) and add the cream. Spread over the surface of the brownies.
Let cool until the ganache is hard and cut into squares using a knife warmed under warm water (dry it first!).
Top with caramelized walnut.
