- 1 habanero pepper seeds removed and diced Habanero peppers seem to be the rage with folks. I like the scotch bonnets better, they have a better taste, more prevelent if you will.
- 3 peaches peeled, pitted, and diced
- 1 mango peeled and diced, look for firmer sweet mangoes.
- 1/2 cup red onion chopped
- 1 cup cilantro leaves 1 bunch, chopped, do remove the thick stems and try to use just the leaves.
- 2 tablespoons lime juice 1 lime’s worth... or rice vinegar/// try a good tequila instead with the lime
- Salt and pepper
- Combine the habanero, peaches, mango, and onion in a bowl and mix.
- Add in the cilantro and stir to combine.
- Add in the lime juice and stir well.
- Salt and pepper to taste.
