  • Smoking some Jalapenos and Serranos

    Had a bunch of ripe peppers so I thought I'd make some Chipotles. I reached out to Craig and he said he will also smoke up some serranos to enhance the spice level of chipotle powder...so that's what I'm going to do!

    Into the Mini Maiden. Using cherry wood chunks and I also loaded up a tube with some hickory pellets.

    I smoked them low for approximately 16 hours...

    I finished up the drying in the Excalibur dehydrator to end up with peppers that looked like this...(one tray of many).

    Through the spice grinder to yield some of the best chipotle powder in existence. The Chipotle powder is on the top and the Serrano powder is a deeper red on the bottom (don't know why my pics turned out verticle and not horizontal??). Man this stuff is a must have in my kitchen.

    I still have a bunch of peppers coming, and I plan on doing some Chipotle in Adobo that I will can. More on that in the next few weeks.

    I like how that turned out. 16 hours ought to provide a great smoke flavor...

    I always wanted to, but never got around to, trying the adobo gig.

    I'll be watching for updates.

      PS: My pepper crop got wiped out. Was outta town for a downpour and of couse no one thought to bring them in...grrr...

        I am bummed. My peppers didn't take. Sorry Smoke Freak (he sent me the seeds) just not hot enough here...YET! I'll try again next year. I am totally jealous of BBQ-E's Adobo project as well. Chipotle in Adobo is a big secret in a lot of my recipes.
